STRAWBERRY FLAVORED PROTEIN GUMMY CANDY FORMULATION

Abstract

This research aimed to formulate a differentiated and nutritious gummy candy. Two formulations were developed until the ideal gummy texture was obtained, with the formulation using unflavored diet gelatin being the most successful. The final product presented attractive organoleptic characteristics, including high biological value protein and the absence of added sugar, making it a healthy option for people with restrictions on the consumption of sweets and for individuals seeking a more balanced diet. The developed gummy candy can be a functional and healthy alternative in the market, encouraging the search for more natural and nutritious foods.
